Roast potatoes in 20 minutes? Andrea shows us how to make roast potatoes in an air fryer using only a tablespoon and a half of oil, and NO salt.

Ingredients

  • 1 pound potatoes
  • ½ teaspoon smoked paprika
  • 1/4 teaspoon garlic paste
  • 1 teaspoon dried oregano
  • ½ teaspoon ground black pepper

Olive oil:

  • Air fryer: 1.5 tablespoons
  • Oven: 30ml

Equipment

  • Large mixing bowl
  • Wooden spoon or alternative (stirring)
  • Knife and chopping board*
  • Measuring spoons
  • Air fryer (or Roasting dish and Large saucepan)

Methods

Air fryer

1. Peel or wash potatoes thoroughly.

2. Cut potatoes into pieces. The size is up to you, but if you’re cooking in an air fryer, you can go slightly smaller.

3. In a large bowl, toss the potatoes with olive oil, smoked paprika, garlic paste and black pepper. Make sure that the potatoes are well coated.

4. Place in the Air Fryer basket, and roast at 195°C for 10 minutes.

If you choose to line your air fryer, this could mean a slightly longer cooking time. Liners interrupt the airflow, which can slow down cooking.

5. Flip the potatoes, and roast for 10 more minutes.

Oven

1. Peel or wash potatoes thoroughly.

2. Cut potatoes into pieces. The size is up to you.

3. In a large bowl, mix the olive oil, smoked paprika, oregano, garlic paste and black pepper.

4. Put the potatoes into a large pan and pour in enough water to barely cover them.

5. Wait for the water to boil.

6. As soon as the water reaches a full rolling boil, lower the heat, put your timer on and simmer the potatoes uncovered, reasonably vigorously, for 2 mins.

7. Remove the potatoes from the pan and put them into a large bowl with your spice mix. Stir until the potatoes are well coated.

8. Spread the potatoes into a single layer on your roasting dish. Make sure they have plenty of room.

9. Roast the potatoes for 15 mins, then take the pan out of the oven and turn the potatoes over. Put the pan back into the oven.

10. Roast for another 15 mins and turn the potatoes over again.

11. Put them back in the oven for another 10-20 mins, or however long it takes to get them really golden and crisp. The colouring will be uneven, which is what you want.
